I love marzipan. Marzipan signifies Christmas. It’s the only food that I connect with Christmas.
So, I will give you a Christmas present. This is a recipe for marzipan.
-16 oz. almond paste. This comes in a can usually, and it will be at your friendly neighborhood giant chain grocery store.
-3 1/2 cups of powdered sugar.
1/2 cup light corn syrup.
1 teaspoon almond extract. (you may add more if you want.)
First, put the almond paste in your food processor. Process it until it is broken into lots of little crumbles. Do not eat any of the plain almond paste. Trust me, it taste’s disgusting. Especially if you try to eat a spoonful. End of story.
Then, process in the powdered sugar. It will look crumbly.
Put the almond extract in with the corn syrup. With the food processor running, drizzle in the corn syrup/extract mix.
After everything is mixed in, and it will still look crumbly, pour it out onto your counter. Start kneading. Knead for a few minutes until it’s not very crumbly anymore.
Now all you have to do is shape it into lots of pretty little shapes. This gets boring fast, so you might end up with lots of little squares. They will still taste good.
You also might want to consider only making 1/2 a batch of marzipan. This recipe makes upwards of 2 cups. Which I do not consider a problem. :)
